Menu for the Week of April 2nd

Monday, April 2nd

Lunch
Asian Chicken Lettuce Wraps
Freshly ground chicken breast sauteed with garlic and ginger with bibb lettuce cups,carrots, jicama and cilantro

Dinner
Stuffed Pork Tenderloin with Sauteed Greens
Pork tenderloin stuffed with artichokes and sun-dried tomatoes wrapped in prosciutto served with sauteed kale.

Wednesday, April 4th

Lunch
Chicken Chopped Salad
Chopped iceburg and romainne lettuces with chopped chicken, cucumber, carrots, tomatoes and peppers, white balsamic viniagrette

Dinner
Spaghetti Squash and Meatballs
Roasted Spaghetti squash, Q7 Ranch Grass fed meatballs with homemade marinara served with a slice of paleo bread

Friday, April 6th

Lunch

Tuna Salad served on Mixed Greens with Paleo Crackers
Albacore tuna, celery, red pepper and onion tossed in Homemade Paleo mayonnaise served on a bed of mixed greens with Paleo crackers


Each meal comes with your choice of snack - Cookies, Muffin or Power Bar.

Don't forget... Pizza Kits are always available.  Just email me which pizza you would like (sausage or bbq chicken) and I will have it for you the next day.
